This Tomato Cucumber Avocado Salad brings back such strong summer feelings for me. One of my very first associations with summer in Croatia is the smell of tomatoes growing in my parents’ garden. And if you have ever had the blessing of smelling tomatoes still warm on the vine, then you know exactly what I mean, and if you have, please consider yourself very lucky, because I know I do.

To me, tomatoes are one of the true foundations of Mediterranean cooking. We use them in so many different ways, and in summer they are just everywhere, as they should be. Growing up, we would eat tomato salad twice a day sometimes, no exaggeration at all. In Croatia, traditionally, people do not really eat huge dinners. We eat our big meal at lunch, then rest a little, work a bit more, and later have a lighter dinner. The wise old people always said you should go to bed half hungry, which I am not always thrilled about, but I do respect the logic.

So on hot summer days, tomato salad would be on the table at lunch as a side dish, maybe with fish, chicken, or some other meat, and then later we might have a smaller portion again for a light dinner. It was simple, fresh, and completely normal, the kind of everyday food that becomes part of your memory without even trying.

This version with avocado is definitely not the salad from my childhood, because back then we did not know what avocado was, let alone casually add it to a tomato salad. But I really love what it brings here. It makes the salad a little more filling, a little creamier, and still keeps everything fresh and bright. So while this is not the exact Croatian tomato salad I grew up with, it feels like a very happy, very delicious evolution of it , and one my family is always more than happy to eat.

I love serving this salad fresh, right after tossing, while the tomatoes are juicy and the avocado still looks its best. It goes beautifully with grilled fish, chicken, steak, sausages, or even just a piece of crusty bread if you want something light and easy. On hot days, I am perfectly happy to let this salad be part of a simple summer meal with sparkling water, homemade lemonade, or Iced Tea Lemonade or a crisp white wine for the grown-ups.

Tips for Success

  • Use the best tomatoes you can find. This is really one of those salads where the tomatoes do a lot of the heavy lifting, so ripe, juicy, flavourful ones make all the difference.
  • Cut the avocado just before serving if possible. It keeps it looking fresh and lovely, and stops it from going too soft or starting to brown too early.
  • Slice the red onion thinly so it adds a little sharpness without taking over the whole salad. If your onion is especially strong, you can soak it in cold water for a few minutes first to soften the flavour.
  • Dress the salad gently. Tomatoes and avocado are not exactly built for rough handling, so a light toss is all you need.
  • Taste before serving. Sometimes the salad needs an extra pinch of salt or a tiny bit more vinegar to really wake everything up.
  • And finally, serve it straight away. This salad is at its best when everything still feels fresh, bright, and full of life, exactly the kind of energy a good summer salad should have.

Substitutions & Variations

  • You can use cherry tomatoes or grape tomatoes instead of large tomatoes if that is what you have. Just cut them in half and you are good to go.
  • If you do not have Lebanese cucumbers, use any crisp cucumber you like. I would just remove some of the seeds if it is a very watery one.
  • This salad is lovely with parsley, but fresh basil also works beautifully if you want an even more summery, Mediterranean feel.
  • If you do not have red wine vinegar, try lemon juice or a little white wine vinegar instead. Both keep the dressing fresh and bright.
  • For a slightly more filling version, you can add feta cheese or even a few olives, which both work really nicely with the tomatoes and cucumber.
  • If you do not want any heat, simply leave out the chili flakes. And if you do like a little extra kick, add a bit more or use finely chopped fresh chili instead.
  • You can also turn it into more of a meal by serving it with grilled fish, chicken, prawns, or crusty bread on the side.
  • And if you want to keep it closer to the kind of tomato salad I grew up with, you can leave the avocado out altogether and just enjoy the simple tomato, cucumber, onion, and parsley version.

Storage Tips

This salad is definitely best eaten fresh, right after it is made, when the tomatoes are juicy, the cucumber is crisp, and the avocado still looks lovely. Once it sits for too long, the tomatoes start releasing more juice and the avocado becomes a little softer, so it really is one of those salads that likes to be enjoyed straight away.

If you do have leftovers, store them in an airtight container in the fridge and eat them within a day. Just know it will be a bit softer and more relaxed by then,  still tasty, just not quite as fresh and pretty as when it was first made.

If you want to get ahead, I would prep the tomatoes, cucumber, onion, and parsley first, then add the avocado and dressing just before serving. That way the salad still feels bright, fresh, and full of life.

Ingredients
  

For the salad:

  • 2 large ripe tomatoes sliced
  • 2 ripe avocados peeled and diced
  • 2 Lebanese cucumbers sliced
  • 1 small red onion thinly sliced
  • 1/4 cup fresh parsley chopped

For the dressing:

  • 2 tbsp extra virgin olive oil
  • 1 tbsp red wine vinegar or to taste
  • salt to taste
  • black pepper to taste
  • 1/2 tsp chili flakes optional

Instructions
 

  • Prepare the Ingredients: Wash and dice the tomatoes and avocados, slice cucumbers Thinly slice the red onion and chop the fresh parsley.
