This Lentil Potato Soup feels very familiar to me in the best possible way. I grew up on the coast of the Adriatic Sea, surrounded by Mediterranean cooking, and we ate lentils a lot. A lot, a lot. And if my memory is serving me well, this was probably the lentil soup most often made in my family. It was one of those simple, everyday meals that just belonged on the table without anyone needing to make a big deal about it.

And do you know what is funny? After all those lentil-filled childhood days, you would think I might have had enough by now. But apparently not. I still cook lentils very often for my own family here in Australia, which I find slightly amusing. Life is funny like that. The foods you grow up with somehow stay with you, and then one day you realise you are making the same kind of soup for your own children and calling it dinner like it was always meant to happen.

What I love about this soup is that it is so simple, but so deeply comforting. Lentils, potatoes, carrots, onion, a little pasta, nothing fancy, nothing trying too hard, just honest food that fills the house with that lovely homemade smell and makes dinner feel warm and settled.   • Cut the potatoes into similar-sized pieces so they cook evenly. It does not have to be perfect, but it does help everything soften at the same time, which makes life easier.
  • Cook the pasta separately, just like the recipe says. I really think it is worth it here. It keeps the soup from becoming too thick and stops the pasta from soaking up all the broth while the soup sits.
  • Taste the soup near the end and adjust the seasoning properly. Lentils and potatoes are lovely, but they do need enough salt and pepper to really wake everything up.
  • And finally, do not panic if the soup thickens as it sits. Lentils like to do that. Just add a splash of hot water or stock when reheating, give it a stir, and it will be absolutely fine.

Storage, Reheating & Freezer Tips

Store any leftover Lentil Potato Soup in an airtight container in the fridge for up to 3 days. If possible, keep the pasta separate, because it will keep soaking up the broth as it sits and the soup will get much thicker by the next day. Not a disaster, just a very enthusiastic pasta situation.

To reheat, I like to warm the soup gently on the stove over low to medium heat, adding a splash of water or stock if it needs loosening up. The microwave works too, especially for lunch, but I still think soup always feels a little more loved when reheated in a pot.

This soup also freezes really well, which is always nice news. I would freeze it without the pasta if you can, then just cook fresh pasta when you are ready to serve. The soup base will keep well in the freezer for up to 2 months. Let it thaw in the fridge overnight, then reheat gently and stir well before serving.

Ingredients
  

  • 2 tbsp olive oil
  • 1 medium onion finely chopped
  • 4 medium carrots diced
  • 1 tbsp tomato paste
  • 2 medium potatoes peeled and diced
  • 1 1/2 cups green or brown lentils washed and drained
  • 8 cups vegetable stock
  • salt to taste
  • black pepper to taste
  • 1 1/2 cup elbow pasta or any short pasta

Instructions
 

  • Make the base: In a large saucepan, over medium heat, heat the olive oil, add onion and carrots. Cook for 5 - 6 minutes until slightly soften. Add tomatoe paste and cook for 1 minute, stirring. Add potatoes and cook for 1 - 2 minutes, stirring so potatoes get slightly crispy but don't stick to the pot.
  • Cook the lentils: Add the lentils and stock. Bring to boil then reduce the heat to simmer. Cook for 25 - 30 minutes or until potatoes and lentils are soft. Season with salt and pepper.
  • Cook the pasta: In the meanwhile, add water to a small saucepan and cook pasta according to package instructuins. Drain and set aside.
  • Serve: Add soup and pasta to the plate and serve.
