Ingredients
  

  • 4 ripe peaches peeled, pitted, and chopped
  • 1 - 2 tbsp granulated sugar
  • 1 tbsp lemon juice
  • 1 can (395 g) sweetened condensed milk
  • 2 tsp vanilla extract
  • Pinch of salt
  • 2 cups cold heavy cream or whipping cream

Instructions
 

  • Cook the peaches: Add the chopped peaches to a saucepan with the sugar and lemon juice. Cook over medium heat for about 5 to 8 minutes, stirring now and then, until the peaches soften and release their juices. You want them lightly cooked and a little more concentrated, not completely dried out. Remove from the heat and let them cool completely.
  • Blend most of the peaches: Once cooled, transfer about three-quarters of the peaches to a blender or food processor and blend into a puree. You can leave it slightly textured if you like. Keep the remaining peaches aside to fold in later.
  • Make the sweet base: In a large bowl, stir together the sweetened condensed milk, vanilla extract, and pinch of salt. Add the peach puree and mix until smooth and well combined.
  • Whip the cream: In a separate bowl, beat the cold heavy cream until stiff peaks form. Be careful not to overwhip it, you want it thick and fluffy, not grainy.
  • Fold everything together: Gently fold the whipped cream into the peach mixture using a spatula. Take your time here so you keep as much air in the mixture as possible. Once mostly combined, fold in the reserved peach pieces.
