This easy Fresh Peach Ice Cream recipe, perfect for those who don't own an ice cream machine. Made with ripe, juicy peaches, this creamy dessert is a refreshing treat that's both simple and delicious.
Cook the peaches: Add the chopped peaches to a saucepan with the sugar and lemon juice. Cook over medium heat for about 5 to 8 minutes, stirring now and then, until the peaches soften and release their juices. You want them lightly cooked and a little more concentrated, not completely dried out. Remove from the heat and let them cool completely.
Blend most of the peaches: Once cooled, transfer about three-quarters of the peaches to a blender or food processor and blend into a puree. You can leave it slightly textured if you like. Keep the remaining peaches aside to fold in later.
Make the sweet base: In a large bowl, stir together the sweetened condensed milk, vanilla extract, and pinch of salt. Add the peach puree and mix until smooth and well combined.
