BBQ Pulled Chicken Sandwich

This BBQ Pulled Chicken Sandwich is the kind of dinner that gets messy hands, happy faces, and absolutely no complaints from anyone at the table. Tender shredded chicken, rich smoky BBQ sauce, soft toasted buns, and crunchy coleslaw come together in the most comforting, satisfying way.

I love this recipe because it gives you all the fun of a pulled meat sandwich without needing a huge cut of meat or hours of complicated cooking. The chicken turns beautifully tender, the sauce is bold and full of flavour, and once everything is piled into a bun, it feels like the kind of meal people get excited about before they even take a bite.

Note from Ana

This BBQ Pulled Chicken Sandwich is one of those recipes I come back to again and again because it is easy, reliable, and always disappears fast. It is a real lifesaver on those days when time is running away from you, everyone is hungry, and you still need to get dinner on the table without losing your mind in the process. The chicken turns tender, the sauce is rich and smoky, and once everything is piled into a soft bun, dinner suddenly feels much more exciting than it had any right to.

My family loves this recipe for a very simple reason: it is a sandwich. And not something green. So yes, everyone will eat it. That is already a beautiful start for a busy family dinner. Add the fact that it is saucy, warm, comforting, and a little bit messy, and now we are in very happy territory.

And honestly, I think a real sandwich should be a bit messy. If nothing is dripping, if no one needs at least one extra napkin, did we even make a proper sandwich? That little bit of chaos is part of the charm. You get the soft toasted bun, the juicy pulled chicken, all that lovely BBQ flavour, and if you add coleslaw on top, you get that cool crunchy bite that makes the whole thing even better.

I also love serving these when I want something casual that still feels like a treat. They are perfect for busy weeknights, weekend lunches, or feeding hungry people without much fuss. In our house, this is exactly the kind of meal that makes everyone sit down happy, eat well, and not ask too many questions, which, as any parent knows, is sometimes the dream.

Best,

Ana

Why you’ll love this recipe

Main ingredients:

Juicy chicken thighs, BBQ sauce, onion, garlic, a little apple cider vinegar, and soft toasted buns come together to make a sandwich that feels hearty, easy, and full of comfort. Add coleslaw on top, and it gets even better.

How it’s made:

The chicken is cooked until tender in a rich BBQ sauce, then shredded and piled generously into toasted buns. It is one of those simple recipes where the stove does most of the work and dinner ends up tasting like you put in far more effort than you actually did.

Flavours:

This sandwich is smoky, saucy, slightly tangy, savoury, and deeply satisfying. The chicken is rich and tender, the BBQ sauce brings that sweet-and-smoky comfort, and the coleslaw adds a cool crunchy bite that makes the whole thing feel balanced and extra delicious. It tastes like easy family dinners, relaxed weekends, and the kind of food everyone is happy to get a little messy for.

How to serve

Serve these BBQ Pulled Chicken Sandwiches warm, piled high in toasted buns, with plenty of napkins nearby because things can get deliciously messy quite quickly. I love serving them with coleslaw tucked right into the sandwich, but they are also really good with chips, potato wedges, sweet potato fries, corn on the cob, pickles, or a simple green salad on the side if you want to round things out. For a more casual dinner or weekend lunch, you can put everything in the middle of the table and let everyone build their own sandwich, which is always a fun option. The pulled chicken is also lovely served in wraps, over rice, on baked potatoes, or even spooned onto burger buns for an easy crowd-pleaser when you are feeding hungry people.

Tips for Success

  • Use chicken thighs if you can. They stay juicier and more tender than chicken breast, which makes a big difference in a recipe like this where you want the meat to shred beautifully and stay full of flavour.
  • Brown the chicken first, even if you are tempted to skip that step. A little colour on the outside adds extra flavour and gives the whole dish a richer taste in the end. It is a small step that is worth it.
  • Let the chicken cook low and slow until it is properly tender. If you try to rush it, it will not shred as easily and will not have that lovely pulled texture. You want it soft enough that it almost falls apart when you touch it with a fork.
  • Taste the sauce before serving. Depending on the BBQ sauce you use, you might want a little more vinegar for tang, a pinch of salt, or even a tiny bit more smoked paprika. Since bottled sauces all taste a little different, this last taste really helps.
  • Do not drown the chicken in sauce right away. Start with enough to coat it well, then add more if needed once it is shredded. You want it juicy and saucy, but still able to sit nicely in the bun without turning into complete sandwich chaos. A little chaos is fine. Total collapse is less charming.
  • Toast the buns. It helps them hold up better and adds a bit of texture, which is especially helpful when the filling is warm and saucy. Soft buns are lovely, but lightly toasted buns are even better here.
  • If you are adding coleslaw, keep it cool and crisp. That contrast between the warm BBQ chicken and the fresh crunchy slaw is one of the best parts of the whole sandwich.
  • And one last little tip from me, make a bit extra if you can. Leftover pulled chicken is never a bad thing to find in the fridge the next day.

Substitutions & Variations

  • This recipe is very easy to tweak depending on what you have at home or what your family likes best. If you do not have chicken thighs, chicken breast will work too, though thighs do stay a little juicier and shred more nicely. You could also make this with leftover cooked chicken or even rotisserie chicken if you want a faster shortcut. Just simmer it in the sauce long enough to soak up all that lovely BBQ flavour.
  • For the sauce, use your favourite BBQ sauce because that really shapes the final flavour. Some are sweeter, some smokier, some tangier, so choose the one you love. If you want a bit more heat, add chilli flakes, hot sauce, or a pinch of cayenne. If you like it sweeter, a spoonful of honey or brown sugar can be lovely. And if you do not have Worcestershire sauce, a little soy sauce can work in a pinch.
  • You can also play around with how you serve it. Hamburger buns are classic, but brioche buns, rolls, wraps, slider buns, or even toasted bread all work well. For a lighter version, serve the pulled chicken in lettuce cups or over rice, baked potatoes, or a big salad. It is one of those fillings that gets along with just about everything.
  • Coleslaw is one of my favourite toppings here because it adds crunch and freshness, but sliced pickles, red onion, jalapeños, cheese, or avocado are all delicious too. And if you are feeding a crowd, you can turn it into a little sandwich bar and let everyone build their own. That always feels fun and makes dinner a bit more relaxed for everyone, especially the person doing the cooking.

Storage, Reheating & Freezer Tips

This BBQ Pulled Chicken stores really well, which is one of the reasons I love it so much. Keep the pulled chicken filling in an airtight container in the fridge for up to 3 days. I would store the buns and any coleslaw separately, so everything stays fresh and the sandwiches do not go soggy.

To reheat, warm the chicken gently in a skillet over low heat or in the microwave in short bursts, stirring now and then so it heats evenly. If it looks a little thick after chilling, add a small splash of water or a spoonful of BBQ sauce to loosen it up and bring back that lovely saucy texture. Then just pile it into toasted buns and you are back in business.

This recipe also freezes beautifully. Let the pulled chicken cool completely, then spoon it into a freezer-safe container or bag and freeze for up to 2 months. Thaw it overnight in the fridge, then reheat gently on the stove or in the microwave until hot. It is the kind of freezer meal that feels like a little gift from your past self, which I always appreciate.

Notes

  • Adjust the amount of BBQ sauce according to your preference.
  • For a smokier flavor, you can add a pinch of liquid smoke to the BBQ sauce.
  • These sandwiches pair well with side dishes like potato salad, baked beans, or corn on the cob.
