Easy Chicken Tikka Masala

0

This Chicken Tikka Masala is the kind of dinner that makes the whole house smell warm, cosy, and impossible to resist. The chicken is tender, the sauce is rich and creamy, and every spoonful feels like proper comfort food you’ll want to mop up with rice or warm naan.

I love this recipe because it gives you all the big, bold flavour of a restaurant-style curry, but in a way that still feels easy enough to make at home. It is one of those dishes that feels a little special without being fussy, which makes it perfect for family dinners, slow weekends, or anytime you want a meal that truly delivers.

Note from Ana

This Chicken Tikka Masala is such a lovely recipe to make when I want something warm, comforting, and a little different from my everyday cooking. I mostly cook Mediterranean food because that is what I grew up with, what feels natural to me, and honestly, what I crave most often. But years and years ago, I started falling in love with flavours and spices from around the world. That is a big part of why World Cuisines means so much to me. I truly love travelling through food, discovering new cultures through the dishes they make, and bringing some of that feeling into my own kitchen.

My family loves this recipe because it feels a little special, like a dinner that breaks up the usual routine in the best possible way. The sauce is rich, creamy, and full of flavour, the chicken turns beautifully tender, and the whole dish just has that cosy, “everyone come to the table now” kind of feeling. It is one of those meals that makes the kitchen smell so good that people suddenly appear and start asking, “When is dinner ready?” as if they were not nowhere to be seen five minutes earlier.

I also love that this recipe is easy to adjust to your own taste. You can make it milder, spicier, creamier, or a little bolder depending on what your family likes. That flexibility makes it such a good one to keep in your back pocket. It gives you all the comfort of a homemade dinner, but with flavours that feel exciting and just a little bit different from the usual weeknight meals. For me, that is always a win.

Best,

Ana

Main ingredients:
This recipe uses simple ingredients like chicken, yogurt, onion, garlic, ginger, warming spices, tomato paste, and cream to create something that feels rich, cosy, and full of flavour.

How it’s made:
The chicken is marinated first, then cooked until golden, before being folded into a creamy, spiced sauce that simmers until everything comes together beautifully.

Flavours:
The flavours are warm, deep, and comforting, with just the right balance of gentle spice, creamy richness, and that beautiful fragrant note that makes the whole kitchen feel inviting. It is the kind of dinner that feels a little different from the everyday, but still comforting enough to make everyone want seconds.

How to serve

I love serving Chicken Tikka Masala with fluffy basmati rice because it soaks up all that rich, creamy sauce so well. Warm naan on the side is always a good idea too, especially for scooping up every last bit from the plate. If I want to make the meal feel a little bigger, I’ll add a simple cucumber salad, sliced tomatoes, or a bowl of plain yogurt to bring something fresh and cooling to the table. It is also lovely with steamed green beans, roasted cauliflower, or a quick side of sautéed spinach if you want to add a vegetable. And if you are feeding a crowd or entertaining, serve it with rice, naan, and a few small sides in the middle of the table so everyone can help themselves. It is one of those dishes that feels generous, cosy, and made for sharing.

Tips for Success

For the best flavour, try to give the chicken a little time in the marinade. Even one hour helps, but if you can leave it for a few hours, the chicken will be more tender and full of flavour. This is one of those small steps that really makes a difference.

When cooking the chicken, do not overcrowd the pan. Give the pieces a bit of space so they can turn golden instead of steaming. If needed, cook them in two batches. A little colour on the chicken adds so much depth to the finished dish.

Take your time with the onions and spices. Let the onion soften properly, and once you add the spices, cook them for a minute or two so they bloom and become fragrant. This is where the sauce starts building that beautiful, deep flavour that makes tikka masala so comforting.

Keep the heat gentle once the cream goes in. You want the sauce to simmer softly, not boil aggressively, so it stays smooth and rich. A gentle simmer also gives the chicken time to soak up all those lovely flavours.

Taste at the end and adjust as needed. This recipe is very forgiving, which is one of the reasons I love it so much. Add a little more salt, a little more cream, or a touch more spice depending on what your family enjoys. Home cooking should work for your table, not the other way around.

And finally, serve it while it is hot and fresh, with rice or naan ready to go. This is definitely the kind of dinner that deserves to be enjoyed straight away, preferably with everyone hovering near the stove asking when they can eat.

Substitutions & Variations

This recipe is very easy to adjust, which is one of the reasons I keep coming back to it. If you do not have everything on hand, or just want to make it work for your family, there are plenty of simple ways to change it.

You can use chicken thighs instead of chicken breast if you prefer juicier, more tender meat. They work beautifully in this kind of sauce and are very forgiving. If you would like to make it vegetarian, try replacing the chicken with roasted cauliflower, chickpeas, paneer, or even tofu.

For the marinade, plain Greek yogurt works just as well as regular plain yogurt and gives you a slightly thicker coating. If you do not have fresh ginger, a little ground ginger can work in a pinch, though fresh will always give the nicest flavour.

You can also adjust the spice level very easily. Use less chili powder for a milder version, especially if you are serving kids, or add a little extra if your family likes more heat. This is one of those recipes that really can be made to suit your own taste.

If you want a lighter sauce, you can swap some of the cream for coconut cream, evaporated milk, or even a splash of cooking cream. Coconut cream will change the flavour slightly, but it is still delicious and gives the sauce a lovely silky finish.

For a deeper tomato flavour, you can add a little canned crushed tomatoes along with the tomato paste. And if you want to stretch the dish a little further, stir in some peas at the end or serve it with extra rice, naan, and a simple salad on the side.

You can even make it feel a little different each time by changing how you serve it. Spoon it over rice, serve it with naan, or use leftovers the next day in wraps or flatbreads for an easy lunch. It is a very flexible recipe, and that is always a win in a busy kitchen.

Storage, Reheating & Freezer Tips

If you have leftovers, this Chicken Tikka Masala stores really well, which makes it such a lovely recipe to have in the fridge for the next day. Let it cool, then transfer it to an airtight container and keep it in the fridge for up to 3 days. The flavours become even deeper overnight, so it is one of those meals that can taste just as good, if not better, the next day.

To reheat, warm it gently in a saucepan over low heat until heated through. If the sauce has thickened a little in the fridge, just add a splash of water, cream, or even a little milk to loosen it up. You can also reheat it in the microwave in short bursts, stirring in between, until hot. I always think dishes like this reheat best when you do not rush them.

This recipe also freezes beautifully, which is very handy if you like having a backup dinner tucked away for busy days. Let it cool completely, then spoon it into a freezer-safe container and freeze for up to 2 months. I like to freeze it in family-sized portions or smaller portions for easy lunches.

When you are ready to use it, thaw it overnight in the fridge if you can, then reheat gently on the stove or in the microwave. The sauce may separate slightly after freezing, but a good stir while reheating usually brings it back together nicely. If needed, add a small splash of cream or water to help smooth it out.
