Farls or Potatoe Flatbread is an Irish potato dish made of grated or mashed potatoes, flour, and butter. The mixture is then formed into round flat cakes, and fried until golden brown. Farls are traditionally served with a fried breakfast, or as a snack with butter and jam. They can also be served as part of a main meal, alongside sausages, bacon, or a stew. Farls are a popular part of Irish cuisine and can be found in many Irish homes.
650gpotatoes peeled and cubed, weighted without skin
115gall-purpose flour
30gunsalted buttermelted
saltto taste
black pepperto taste
For cooking:
20 - 40 g butter
Instructions
Prepare potatoes: Add potatoes to cold, salted water and cook until tender, about 25 to 30 minutes. Drain potatoes and put them in a colander allowing them to cool down and dry off for 5 minutes. Add potatoes to a bowl and while still hot, pass the potatoes through ricer or mash them with a fork or masher until fluffy.
Make the dough: To the potatoes add flour, butter, salt and pepper. Combine all of the ingredients until it makes a soft dough. Move the dough to a slightly floured surface and flatten it to a disc. Using a knife, cut the disc into 8 pieces.
Fry the dough: In aa big skillet over medium heat melt a big spoonful of butter. Add the pieces of Potatoe flatbread to the butter and cook on both sides until golden brown, about 5 minutes per side. If you cooking in bathes, add more butter between each bach.
Serving: Serve hot or cold with butter and jam or with fried eggs and bacon or as a side with delicious soup of your choice.
Notes
More serving options: serve farls with poached eggs, bacon, fried mushrooms and tomatoes, sausages, fried onions, grilledcheese, avocado, honey, cream cheese, apple slices etc.You can use leftover mashed potatoes to make farls, but you will need to adjust the flour and butter depending on the ingredients of mashed potatoes (if you used cream or milk in mashed potatoes etc)
