In my opinion, every family should have their own go-to, everyday simple green salad, the kind you can throw together quickly, the kind everyone will actually eat, and the kind you can change a little depending on what is in season or what is sitting in the fridge waiting to be useful.

Well, this salad is exactly that for us.

It is fresh, easy, reliable, and somehow always manages to make dinner feel more complete. It is the salad I make when I need something quick, when I want to add colour to the table, or when the meal just needs that crisp, fresh little side to balance everything out. And because it is so simple, it works with almost anything.

My family loves it because it is not trying too hard. It has all the good things; crisp greens, cucumber, tomatoes, red onion, a light vinaigrette, and it tastes fresh and bright without becoming the kind of salad people politely push around on their plates. It is just a really good, honest salad.

It is also lovely with crusty bread, roasted potatoes, or soup if you want to build a simple meal around it. This is one of those salads that fits in almost anywhere, which is exactly why I make it so often.

Tips for Success

  • The biggest tip for a really lovely green salad is to make sure everything is properly dry before you start. If the greens are wet, the dressing will slide right off instead of coating everything nicely, and the salad can feel a bit flat. A salad spinner is wonderful here, but paper towels work too.
  • Try to use a good mix of textures. That is what makes a simple salad feel more interesting. Crisp cucumber, juicy tomatoes, tender greens, and a little sharpness from the onion already give you a very good balance without needing anything complicated.

A mix is lovely, but a single green works perfectly well too.
  • For the vegetables, you can keep it as simple as you like or add a little more depending on the season. Bell peppers, radishes, avocado, or even a few thin slices of celery can be really lovely here. If tomatoes are not in season, you can leave them out and let the cucumber and greens do the work.
  • If you are not a fan of red onion, use spring onion, shallot, or simply leave it out. The salad will still be fresh and beautiful without it.
  • The dressing is also very flexible. If you do not have red wine vinegar, you can use white wine vinegar, apple cider vinegar, or even a little lemon juice. And if you like a slightly creamier salad, a spoonful of Greek yogurt or a little Dijon mustard whisked into the dressing can be very nice too.
  • For the optional extras, feta, olives, and even a little grated Parmesan are all lovely ways to change the feel of the salad without making it complicated. Fresh herbs like parsley, dill, or basil can also make it feel a little different and extra fresh.

Storage Tips

This salad is definitely best enjoyed fresh, just after tossing, while the greens are still crisp and everything feels bright and lively. That is really when a simple green salad is at its best.

If you want to get ahead, the best little trick is to store everything separately. Keep the washed and dried greens in the fridge, the chopped vegetables in their own containers, and the dressing in a jar or small container. That way, when you are ready to eat, you can just toss everything together and it still tastes fresh and lovely.

Once the salad is fully dressed, it does not keep especially well. The greens start to soften quite quickly, so I would try to serve it straight away after adding the vinaigrette.

If you do have leftovers, store them in the fridge and eat them the same day if possible. They will still be fine, just a little softer and less crisp than when first made.

One little tip: if you wash your greens ahead of time, make sure they are really dry before storing. A dry salad is a happy salad, and it keeps much better that way.

  • 8 cups Mixed greens (such as romaine, arugula, and spinach)
  • 1 small red onion thinly sliced
  • 1 cucumber sliced or diced
  • 1 cup cherry tomatoes halved

Optional additions:

  • crumbled feta cheese
  • bell peppers diced
  • olives

Instructions
 

  • Prepare the Vinaigrette: In a small bowl, whisk together olive oil, red wine vinegar, honey (if using), and a pinch of salt and pepper until well combined. Adjust the seasoning to taste.
