This is such an easy side dish to make, and honestly, it is probably one of the most kid-friendly side dishes out there. Sweet, soft, buttery carrots are usually a much easier sell than many other vegetables, and in our house, they disappear very quickly.

I think people sometimes forget about serving carrots like this outside the holiday season. Somehow glazed carrots get placed into the “special occasion” category, and then we all move on and save them for Christmas or big family lunches. But my kids love them so much that I always think, why exactly are we waiting for a holiday? Why not make them on a regular Tuesday?

That is one of the reasons I love this recipe so much. It takes very simple ingredients and turns them into something that feels a little special without any real effort. The carrots become tender and glossy, the butter makes everything richer, and the brown sugar and honey bring that lovely gentle sweetness that makes the whole dish so comforting.

  • For the carrots, I usually slice regular carrots, but baby carrots work too if that is what you have. Just keep in mind they may need a slightly different cooking time depending on their size.
  • You can also change the flavour a little with small extras. A pinch of cinnamon gives the carrots a warmer, more holiday-style feel, while a little fresh thyme or parsley on top makes them feel fresher and a bit more savoury. If you like a tiny bit of brightness, a squeeze of orange juice or a little orange zest can be really lovely with the honey glaze.
  • For a slightly deeper flavour, you can add a small splash of balsamic vinegar right at the end. It gives the glaze a little more complexity and works especially well if you are serving the carrots with roast meat.

Storage, Reheating & Freezer Tips

These glazed carrots store really well, which makes them such a handy side dish to make ahead or enjoy the next day. Once they have cooled, keep them in an airtight container in the fridge for up to 3 days. They are lovely fresh, but they also reheat beautifully, which is always nice when dinner needs a little help.

To reheat, warm them gently in a frying pan over low to medium-low heat until heated through. This is my favourite way because it helps the glaze loosen up again and keeps the carrots tasting nice and glossy. You can also reheat them in the microwave if you need something quick, just in short bursts and with a gentle stir in between.

If the glaze has thickened too much in the fridge, add a tiny splash of water while reheating to help everything come back together. And it is always worth tasting them again before serving, because sometimes they need just a little extra salt or black pepper to freshen them up.

You can also freeze them, though I think they are at their best fresh or from the fridge. If you do want to freeze them, let them cool completely, then place them in a freezer-safe container and freeze for up to 2 months. Thaw them in the fridge overnight before reheating gently on the stove or in the microwave.

One little tip: because carrots soften a bit more after freezing and thawing, they may not hold quite the same texture as when freshly made, but they will still taste lovely. Instructions

Add the cooked carrots to the skillet. Toss to coat the carrots in the glaze.
