If you know me already, you know I love potatoes. I could probably live off potatoes. Well... potatoes and asparagus. And pasta. So, potatoes, asparagus, and pasta. Very balanced, very sensible, obviously.

What I actually wanted to say is that this Dill Potato Salad is truly delicious. It is one of those recipes that is meant to be a side dish, but honestly, you can absolutely have it for lunch and not need anything else. I would. Happily.

My family loves it because it is creamy, fresh, comforting, and easy to eat with just about anything. The potatoes make it filling, the dill gives it that lovely bright flavour, and the little bits of red onion and celery keep it from feeling too heavy. It is simple food, but it tastes like the kind of simple food that really knows what it is doing.

Ingredients
  

For the salad:

  • 6  medium potatoes peeled and cubed
  • 1 cup mayonnaise
  • 1/4 cup sour cream
  • 1/4 cup  fresh dill chopped
  • 1 small red onion finely chopped
  • 2 celery stalks,  finely chopped
  • salt to taste
  • black pepper to taste

For garnish (optional):

  • Extra fresh dill
  • Paprika powder

Instructions
 

  • Prepare the Potatoes: Peel and cube the potatoes. Place them in a pot of salted water and bring to a boil. Cook until fork-tender, about 10-15 minutes. Drain and let cool.
  • Prepare the Dressing: In a mixing bowl, combine the mayonnaise, sour cream, and chopped fresh dill. Mix well.
  • Chop the Veggies: Finely chop the red onion and celery stalks.
  • Assemble the Salad: In a large bowl, combine the cooled potatoes, chopped red onion, and celery.
